Banana egg white pancakes have been floating around Pinterest and social media for a while now, so today I tried my luck at making them. While my picture is a little questionable, they were AMAZING! Super nourishing, filling, sweet (just the right kind of sweet) and simple to make. I will definitely be making these again!

What you will need:
- 1 Banana
- 1/3 cup Egg whites
- Cinnamon to taste
- Coconut oil for frying
What to do:
- Blend the banana with a Stick Blender (love this, it is seriously the best kitchen purchase I have made this year!).
- Add the egg whites. I usually waste so many eggs by separating out the whites from the yolks, so I finally purchased frozen egg whites and used these for the pancakes.
- Mixed together the egg whites and mashed banana with a touch of cinnamon.
- Melt the coconut oil, and cook in a fry pan on a medium heat. Flip and serve.
These banana egg white pancakes tasted delish! I topped the pancake stack with Jalna A2 yogurt and organic New Zealand blueberries (from the frozen section), and served with an almond milk coffee. Not a bad way to start the day!
