Pre-soaked baked oatmeal

We have lots of sickness in our household right now with my little munchkin having croup and I have now got his cold. The best thing when sick (in my opinion) is a warm and hearty breakfast.

Pre-soaking this oatmeal is key and will make the ingredients easier for your body to digest (Especially when your body is busy fighting a cold). It also plumps up the dried fruit, therefore minimising that horrible bloated feeling you can get after eating dried fruit.

In a large fridge-safe container add 2 cups organic quick oats, 1/4 cup sunflower seeds, 1/4 cup linseeds, 1/4 cup shredded coconut, 1/4 cup Gogi berries, 1/4 cup sultanas or cranberries (or a mixture of the two), and about 4 dried apple rings roughly chopped. Cover with filtered water, seal, and place in the fridge. After about 2 hours the oatmeal with look thick and creamy and can be stored in the fridge for about a week. 

To serve:

Scoop 1 cup of the mixture into a microwave save bowl. Add cinnamon and microwave on high for 2 minutes to bake. I added a sprinkle of stevia and unsweetened ricemilk, and served with sliced fresh strawberries.   Approximate nutrition per serve as per directions: 344 calories, 5g fat, 60g carbs,8 g protein (to reduce calories, reduce or eliminate dried fruit)
