Most weeks I will make a trip out to Burleigh (Gold Coast, Queensland) to visit the store “Heavenly Foods”. They have a great range of health foods and sell in bulk bins so I can get as much or as little as I need. This week I bought pumpkin seeds, shredded coconut, flaxseed oil, no added sugar fruit balls, Byron bay dairy free chocolate covered banana, and carob covered honeycomb.
This is a salsa I made during the weekend to snack on with crackers and to add to my salads and wraps. It was super easy to make, with one diced tomato, half a cucumber diced, two spring onions chopped finely, half a can of corn kernals (you could cook your own). The dressing was the juice of one lemon, a tablespoon or two of flaxseed oil, about the same amount of apple cider vinegar, and salt and pepper. Delish!
I was super busy on Monday and after running errands (finally ordering our wedding invitations), it was about 2:30pm and I hadn’t had lunch. I quickly whipped up this salad, consisting of grated carrot, beetroot, diced cucumber, diced tomato, finely chopped kale, and dressed with apple cider vinegar, the juice of half a lemon, flaxseed oil, salt and pepper (I also had a handful of pumpkin seeds and tamari almonds for protein).
My morning oats! I literally can not function without them. This bowl was organic oats, linseeds, chia seeds all soaked overnight in water, microwaved on high for two minutes and then sprinkled with stevia, raspberries and blueberries.
A morning snack while playing on the floor with my son. I always have rice-cakes in the pantry as a quick snack. This was homemade hummus and my homemade salsa shown above (there were two more rice cakes but they didn’t last long enough to make the photo…).
