Lately I feel as though I have plateaued a little and my after-dinner (clean) snacking is definitely holding me back from reaching my final goals. I don’t know about you, but no matter how full I am after dinner I crave something sweet. I decided to have an afternoon of food prep today to make sure I am back on track and also made some raw, organic and clean chocolate as a “sweet treat” after dinner, in exchange for my yogurt and cereal combos.

Recipe:

1/3 cup almond meal and enough water to make a paste (almond butter would also work)


1/3 cup organic coconut oil, melted

1-2 tbsp organic raw cacao powder (more if you like your choc dark)

1-2 tsp granulated stevia (more or less depending on how sweet you like your chocolate)

Method: Mix all ingredients together to form a thick paste. Spread evenly on a flat surface covered in cling wrap and freeze for 1 hour. Once frozen, break or cut into bite sized pieces. Store in fridge or freezer.

The perfect partner to my late night chai tea (if 8pm counts as “late”?!?)
